Nicolas Rossignol is single handedly changing the way the world thinks about the Côte de Beaune. Nicolas is a 5th generation Burgundian winemaker. Having the most diverse portfolio of vineyard holdings in all of Burgundy gives him a multitude of options when it comes to blending. Make no mistake, he is a master blender. That means that the 2017 Nicolas Rossignol Bourgogne is so much more than the sum of its parts. It is beautiful, 100% Pinot Noir in its purest form. On the nose is Strawberry, lavender and a hint of anise. The palate adds red currant, orange peel, an umami bite of shiitake mushroom, with just a touch of cracked pepper. The tannins are soft, focusing on the fruit, making the wine approachable now. While clearly Burgundian, this would be an excellent wine for lovers of New World Pinot Noir who wanted to dip their toes into the Burgundy pool. This would pair beautifully with grilled salmon or roast chicken. Get enough to try now, but you’ll want to stock up for your fall feast.
