Our 2018 Chardonnay was made from grapes from Lazy W Vineyard in the absolute heart of the Russian River Valley. The vineyard is nestled in between Westside Road and the Russian River, where the river bends and turns west toward Guernville and the Pacific Ocean. Ripening slowly, the fruit builds its layers of flavor on top of fresh acidity that holds steady until harvest. Planted to the Wente clone of Chardonnay, we harvested small clusters of intense grapes on September 25, 2018. We barrel-fermented the wine on the lees using native yeasts. The wine completed malo-lactic fermentation prior to finishing primary fermentation. It’s not how we planned it, but the quick ML kept the wine from building up diacetyl, the chemical compound that leads to the buttery character in Chardonnay. As a result were able to retain freshness and vibrancy in the wine while at the same time gaining texture—saving the butter for our popcorn. We utilized a small percentage (15%) of new oak in the fermentation and aging of the wine.
